Dreamy Desserts from Down Under

Visiting Australia is not just about trying the exotic meats like kangaroo, ostrich, and crocodile. Nope, Down Under is also where you can find some of the world’s most amazing desserts. Some of these are too good to be true!

Tim Tam Cake is a cake made from the same brand of Arnott’s chocolate biscuit that is available in several countries around the world, but originated in Australia. A Tim Tam Cake is composed of two layers of chocolate sponge, and separated by a light chocolate cream filling.

A Pavlova is a meringue-based dessert named after a Russian ballerina. It is a meringue cake with a crisp crust and soft, light inside, usually topped with fruit and, optionally, whipped cream. The dessert is a popular dish and an important part of the national cuisine of Australia (and New Zealand), and with its simple recipe it is frequently served during celebratory and holiday meals. It is a dessert most identified with the summer (like Britain’s Strawberries and Cream).

Icebox Cake is a dessert consisting of whipped cream and chocolate wafers. The wafers are stacked to form a log with whipped cream cementing them together, and then the log is laid on its side. A second log is formed and the two are set side-by-side and more whipped cream covers the exterior. The cake is then left overnight in the fridge (or “icebox”). The wafers absorb moisture from the whipped cream and the whole thing can be served in slices that are cut at a 45-degree angle, so bands of chocolate and cream are visible across each slice. Cookies can be used instead of wafers.

Chocolate Crackles are a popular children’s confection in Australia and New Zealand, especially for birthday parties and at school fairs. The principal ingredient is the commercial breakfast cereal Rice Bubbles. Since these chocolate crackles do not require baking they are often used as an activity for young children. Variations include adding raisins, chocolate chips, mini-marshmallows, or peanut butter. Alternatives to Rice Bubbles include Corn Flakes or crispy fried noodles.

Lamingtons are my favourite dessert from Australia! These amazing dessert treats consist of squares or rectangles of sponge cake coated in a layer of chocolate sauce and desiccated coconut. Lamingtons are sometimes served as two halves with a layer of cream or strawberry jam between! Delicious!
